VANDERPUMP VILLA’S LEMON TARTS
If you’ve loved watching Vanderpump Villa on Hulu, you know that the decadent meals and fabulous cocktails were a highlight for our guests while staying at Chateau Rosabelle! INGREDIENTS
(MAKES 2 TARTLETS)
Breton shortbread :
1/2 Cup + 1 tbsp Flour
1 tsp baking powder
1/4 cup sugar
1/2 stick soft semi-salted butter
1 egg yolk
Lemon cream:
1 stick butter
zest of 1 and a half lemon
2 and 3/4 oz lemon juice
1 whole egg
1/3 cup + 2 tbsp sugar
INSTRUCTIONS
Breton shortbread:
The day before - Mix the flour, baking powder and sugar in a large bowl.
Add the softened butter cut into cubes and combine with your fingertips.
Add the egg yolk and mix until a ball of dough forms
Refrigerate it for 30 minutes before spreading it, if it is too soft.
Spread the dough between 2 sheets of baking paper to a thickness of 1/2 cm
Place the dough on a baking tray.
Preheat the oven to 400°F.
Bake the shortbread for approximately 12-14 minutes (adjust depending on the oven), until they are golden brown.
Remove from the oven.
Cut it to the dimensions you need and leave to cool
Lemon cream :
Zest the lemons and squeeze them.
In a saucepan, heat the butter, juice and lemon zest.
In a mixing bowl, combine the eggs and sugar.
When the saucepan is boiling, pour part of the butter-lemon mixture over the previous mixture and stir well.
Return everything to the saucepan.
Cook until the mixture becomes translucent.
Remove into another container, or in any silicone cake mold of your choice and refrigerate.
Assembly:
Place a good quantity of lemon mixture on the Breton shortbread.
Smooth the device with a palette, so as to obtain a small dome.
Zest a little of the washed lime directly above.
